Loin of Veal with Vegetables

Preparation: 20 min – Cooking time: 50 min – Resting time: 10 min
Ingredients pour 6 servings:

1 kg veal loin roast
12 small potatoes
6 small turnips
3 carrots
12 pearl onions
3 tablespoons olive oil
1 bunch fresh chervil
salt and freshly ground pepper



Preparation:

1/Peel vegetables. Cut carrots into 1 cm slices. Wash potatoes.

2/Preheat oven to 220 °C.

3/Arrange chervil on bottom of roasting pan. Place vegetables on top, then meat. Drizzle with olive oil. Season with salt and pepper. Close with lid.

4/Roast for 50 min.

5/At end of cooking time, remove pan from oven and let rest, covered with lid, for 10 min before serving.
