
Tuna-Stuffed Tomatoes
Preparation: 20 min – Cooking time: 20 min
Ingredients for 6 servings:
300 g canned tuna (packed in water)
2 eggs
3 slices of crispy bread (crust removed)
2 tablespoons olive oil
chopped parsley
6 big tomatoes
100 g mozzarella
salt and freshly ground pepper
Preparation:
1/Preheat oven to 200 °C
2/Cut off tomato tops, scoop out pulp with spoon. Sprinkle insides of tomatoes with salt. Turn upside down to drain on paper towel.
3/Mix tuna, egg, bread, olive oil and parsley with fork.
Season with salt and pepper.
4/Spoon stuffing into tomatoes.
Top each with a slice of mozzarella and the tomato top.
5/Bake in oven for 20 min.
